Granola Bars

This recipe is pretty simple and allows you to be creative. In one large bowl mix together:

  • 3 cups nuts & or seeds- whole, ground, or chopped.- These can be salted, roasted, or plain.
  • 2 cups dried fruit- chopped- whole- etc
  • 2 cups either/or almond meal, flaxseed meal- or any other nut or seed meal
  • 1 1/2 cup whole oats

Set this aside after mixing.

In a heavy saucepan, slowly melt & stir together 1 cup butter and 2 1/2 cups brown sugar. Make sure you stir constantly and use low heat. When mixture begins to bubble, continue stirring constantly until it gets to look a bit lighter and translucent. It makes a sort of toffee- Be careful not to burn. This toffee mixture is extremely hot and will burn skin- so use caution

Immediately dump the toffee mix on top of the nut mix and stir until completely absorbed. Press onto non-stick jelly role pan (cookie sheet with sides). If it’s not non-stick, use a bit of Pam or oil or butter to grease it slightly. Spread out and pat down with clean wet hands. Cut when warm. Leave in pan until solid. May put into freezer to make process go faster.

These bars can be frozen easily.
